Make your own Traditional Welsh Cakes at home!

Everybody knows that Traditional Welsh Cakes are best eaten fresh off the griddle (okay give them a few minutes too cool down!) and we're here to help you makes these sweet Welsh treats at home.

Ingredients
225g self raising flour or plain flour
1tsp baking powder
125g butter or margarine
75g caster sugar
75g dried fruit (currants, raisins, sultanas or a mix)
1 large egg, beaten
A good pinch of mixed spice
What you'll need
Rolling pin
Sieve
Mixing bowl
Weighing Scales
Welsh Cake or Cookie Cutter
Spatula
A griddle, bakestone or frying pan (on low heat!)
Method
Step one
Wash your hands!
Step Two
Chop your butter up nice and small. This will help with the consistency of your dough and help prevent buttery chunks that can burn your welsh cake when cooking.
Step Three
In a large mixing bowl rub your butter, flour and spice together with your hands till it comes together like breadcrumbs.
Step Four
Stir in the caster sugar and dried fruit. MamGu's Top Tip - swap out your dried fruit for chocolate chips or something else that suits your taste!
Step Five
Make a well in the middle of the bowl and add the beaten egg.
Step Six
Get ready as things are about to get messy! With your hands stir the egg into the rest of the ingredients and keep mixing until you get a firm ball of dough. If you find your mixture is too dry, add a tiny dash of milk. Once you have your ball of dough, you’re ready to roll!
Step Seven
Sprinkle a clean work surface with some flour and roll out your welsh cake dough till it's about 1cm thick. Then using a cutter (any shape will do) start cutting. Keep repeating this process till all the dough is gone. If you are left with lot's of little bits then work them all together and re roll out your dough. MamGu's Top Tip - keeping sprinkling your surface and dough with a little bit more flour, this will stop it all sticking together!
Step Eight
Time to cook! Now it doesn't matter how your cooking your Traditional Welsh Cakes, wether it's on a traditional bakestone, griddle or just a standard a frying pan, this is a very important tip... keep it on a low heat!
Bake your welsh cakes very, very, slowly! Don’t mess with them whilst they are on the plank, just leave them and let the smell of freshly baking welsh cakes fill the room. Flip them after about 3 minutes and bake each side equally each side. Then transfer to a cooling rack, if you wish to cover them in sugar now is the time.
