Traditional Welsh Cawl Recipe

Make your own Traditional Welsh Cawl at home

Prep Time 10 minutes | Cook Time 2 hours | Makes 6 to 8 servings

Traditional Welsh Cawl is one of the most wholesome and comforting meals you can have to warm you up on a chilly winters day - and even better paired with a chunk of mature cheddar cheese and a buttered bread roll.

Ingredients

1kg neck or shoulder of Welsh lamb - diced (save the bones!)
1 white onion - roughly chopped
6 medium potatoes - peeled and chopped
3 carrots - peeled and chopped
1 small swede - peeled and chopped
2 parsnips - peeled and chopped
2 leeks - washed and cut
2 litres of vegetable or lamb stock
Tap water
1 small bunch of fresh parsley or thyme

No need to follow these amounts to the T - cater to your taste! 

What you'll need 

Sharp knife
Peeler
Wooden spoon
Slotted spoon or tongs
Chopping board
Large sauce pan / pot
Hob

Method

Step one
Wash your hands!

Step Two
In a large pot, fry your diced lamb, removing the fat as you go. 

Step Three
Once your lamb is browned, add the onions and vegetable stock. Also add you bones if you have saved them). Bring this to the boil then simmer for 30 minutes.

Step Four
Add your carrots, swede, parsnips and tap water. Bring this to the boil and then simmer for a further 45 minutes.

Step Five
Add you new potatoes and extra tap water if necessary. Bring this to the boil and then simmer for a final 30 minutes.

Step Six
Remove the bones.

Step Seven
Once your cawl is simmering it's time to lay the table. Cut some large chunks of mature cheddar cheese (we highly recommend Snowdonia Black Bomber - it's incredible!) and spread a good dolop of Welsh salted butter on to your favourite bread. (We recommend sourdough from our friends at Crwst.)

Step Eight
Time to serve! Sprinkle your cawl with a light amount of parsley or thyme... and ENJOY!

Add some chilli powder to elevate your cawl to the next level!
